SIMPLE BBQ CHICKEN


I love to grill. I grill at least one night a week, though lately it's been quite a bit more. The lack of dishes, time outside, and flavor you get from grilling is all so good that I can't stop. Over the next few weeks I'll share several of my favorite grill recipes. Today, I'm starting with my grilled BBQ Chicken because it's so simple, so juicy, and probably unlike any BBQ chicken you've had before.
There are two key factors that make this chicken shine. First is the greek yogurt, and second is the Primal Kitchen Golden BBQ Sauce. It's heavenly. Okay, on to the recipe!
INGREDIENTS
1/2C Greek Yogurt (we prefer Fage 5%)
1 large, fresh chicken breast per person (you can use frozen & defrosted, but it's not quite as juicy)
1/2TBS Paprika
1/2TBS Chili Powder
1/2TBS Garlic Powder
1/2TBS Onion Powder
1tsp Salt
1tsp Pepper
Primal Kitchen Golden BBQ Sauce
DIRECTIONS
Place the chicken into a gallon sized ziplock bag, then add the greek yogurt, paprika, chili powder, garlic powder, onion powder, salt, and pepper. Roll to remove air and seal, then smush everything around until it's well mixed and the chicken is coated. Marinate at least 4 hours, or overnight if possible.
Heat your grill to 400F and clean, then place chicken on grill (total grilling time will be between 10 and 15 minutes total, depending on thickness of the chicken breast). Flip halfway through. Baste with Primal Kitchen Golden BBQ Sauce and flip to carmelize. Repeat on other side. Allow chicken to rest for a few minuets before eating. Serve with even more BBQ sauce and sides (our personal fav is a simple grilled zucchini, halved longways then coated with some olive oil, salt, pepper, and garlic powder).
