CREAMY CILANTRO JALAPENO DRESSING
One of the hardest things about living in Texas is that many of my life-long favs are no longer available. As in, they simply don't sell them in Texas. I spend about 32% of my time in stores wandering around, bewildered, and slightly T-ed off that they don't carry what I'm looking for. Arrowhead Spring Water? No way. G's mouth wash? Not here! Reader, I could go on and on. So, when I tell you that I ran to the grocery store to grab my favorite fish taco topping, Lighthouse Cilantro Dressing, only to find out it isn't something they carry, you won't be surprised.
In a fortunate turn of events, though, it prompted me to try my hand at making my own, and while I won't definitively say it was better than the Lighthouse, I will say that G and I both liked it way more and it will be our new fish taco topping go-to!

CREAMY CILANTRO JALAPENO DRESSING
INGREDIENTS
1/4C 5% Fage Greek Yogurt
1/4C Light Sour Cream
Juice of one small lime (approx 2TBS)
1C cilantro
1/2 Medium-sized Avocado
1/4 - 1/3 Jalapeno, seeded (more if you want it spicier!)
2T milk
1T Ranch Dressing Mix (the powdered kind)
S&P to taste ( I used about 1/3 tsp salt and 1/4 tsp pepper)
DIRECTIONS
Place all ingredients in a food processor and blend until smooth. If you prefer a thinner dressing, add a touch more milk. I like mine about ranch consistency.
