RECIPE BOX: SPINACH & ARTICHOKE DIP


Since National Artichoke Day fell on a Wednesday, it was easy to decide what to share with you today: my recipe for Spinch & Artichoke Dip. This is one of my favorites. Savory, warm, and simple. I love to eat it with blue corn tortilla chips, but it's also really yummy with pita chips! Whip up a batch for your next get together. It only takes 15 minutes!


SPINICH & ARTICHOKE DIP

INGREDIENTS

8 oz Cream Cheese

1/3 C Sour Cream

1/4 C Mayonnaise

1/2 C Shredded Italian Cheese Blend

1 can Artichoke Hearts in brine, quartered

1 C Frozen Chopped Spinich

1/2 tsp Garlic Powder

Pinch Red Chili Flakes

Salt

Pepper

DIRECTIONS

Thaw the spinich, then place in paper towels or cheese cloth and wring dry. Drain the artichoke hearts, dice into thirds, place in paper towels or cheese cloth and wring dry. Add these to room temperature cream cheese in a microwave safe bowl.

Microwave for 60 seconds, covered to avoid splatters. Remove from microwave and stir. Add sour cream, mayonnaise, cheese, garlic powder, chili flakes, and salt and pepper to taste. Place back into microwave and heat for 60 seconds. Remove, stir, and replace for another 60 seconds. Enjoy!
