RECIPE BOX: SIMPLY MINTY COFFEE
Happy Monday, reader! Monday's don't bother me as much as they used to, since they're now part of my "weekend", but I remember the monday slump, and the one thing I couldn't (okay, okay, still can't!) wait for: that first cup of coffee. Most mornings, I make mine using a pour-over with just a touch of cinnamon, but I recently discovered a way to incorporate my other favorite flavor, mint, into an iced version of my favorite beverage! Behold, my Simply Minty coffee:

It's sweet, cold, and refreshing. Perfect for a warm summer morning, or an afternoon pick-me-up. And, best of all, it's easy to make!
Simply Minty Coffee
Ingredients & Equipment
French Press (4 Cup)
Cocktail Shaker
Muddler
1/4 Cup of your favorite coffee, ground
2 TBSP Sugar
Big Handful of Mint, plus a sprig for garnish
Half and Half (or Cream, or any percentage Milk you prefer!)
Lots of Ice
Directions
Heat some water to just below boiling. Once it's there, fill your french press containing the 1/4 C ground coffee half-way. Stir and allow to sit for four minutes before pressing.
While the coffee is brewing, muddle your handful of mint with the 2 TBSP of sugar in a cocktail shaker. Add two cups of half and half, a big handful of ice, and the coffee once's it's ready.
Cap and shake your shaker vigorously for about 30 seconds, then strain into a glass full of ice. Garnish with the mint spring, add an adorable straw, and enjoy!
