I love to cook, but my real wheel-house is dips and sauces. And this Spinach Feta dip is on of my most popular party offerings. I love it with herbed crackers (think Tollhouse Flatbreads) or a sliced baguette. But my favorite thing about this dip? It is SO. SIMPLE. Toss everything in a food processor, blend until smooth, and go. Brilliant.
SPINACH FETA DIP
4 C fresh spinach, rinsed
1 package (5 oz) crumbled feta
1 package (8 oz) cream cheese 1/2 C sour cream
1/4 C chopped chives
2 tsp lemon juice
S&P to taste
Place all ingredients in food processor. Blend until smooth. Transfer into bowl of your choice and eat. Yum.
